Fresh Raspberry Pie, ymm

Finally, I had enough Red Raspberries to do something with!  The black raspberries have been fantastic this year, but the red, not so much.



So, though I did can 15 jars of black raspberry jam a week or so ago, there won't be any posts of raspberry jam this year!  It is my favorite and goes fast around here.  The kids know not to take the last jar, so I still have one from last year.  We did have a great crop last year (and my mom gave me some too), so if I get desperate I can can some from frozen berries I still have.  

But, this year with the "fresh" ones I did get, I decided to make a fresh pie.  This is a nice refreshing summer dessert that you don't have to bake.  I like that you use fresh berries and they retain that "fresh" shape and flavor.  This one only gets made when the fruit is "in season" so it's a summer tradition.

Like most good recipes, it comes from my mom.


Fresh Berry Pie
4 cups berries (raspberry, blueberry, strawberry etc.)
1 cup sugar
1 cup water
3T. mixed with 1/2 cup water
1 3oz package of jello (sugar free works fine too)
purchased or homemade pie crust
 
Bring the cup of sugar and cup of water to a boil, add in the cornstarch mix.  Bring it back to a boil stirring until it turns more opaque (3-5 minutes), add in the jello, stir till dissolved and remove from heat. Stir in berries and pour into a graham cracker or shortbread crust and chill.
